A great informative article Caroline. I do love French soft cheeses but there's a limited enough supply in Ireland. There is so much work involved in producing it. I never heard of homeopathy and aromatherapy being used on cows. How??? I must tell the hubbie 😆
Yes I first published this at the beginning of June I think Betty. I adore cheese Betty. I have booked 2 more cheese making courses for 2026 - one with Sara Ward, an urban small holder in London near Twickenham Rugby stadium and a second with Silke Cropp, legendary goats cheese maker in north west Ireland later in the year.
I’m not sure Betty but I think the death of my mum this year has contributed to my sense of urgency. These days I am only too aware of my own mortality.
Do you know I renewed my 10 year driving licence last week and it came back with a 9 year validity. I was puzzled at first. But then I realised it will expire on the day before my 70th birthday. I’ll be 70 in less than 10 years - now that is very sobering!
So I suppose Carpe Diem is my guiding principle. Do it while you can because Life is a gift.
Do you have to take a test again at 70? They are talking about that here.
I definitely understand what you mean. My travel and writing project is also part of a Carpe Diem philosophy. It’s important we do things while we’re alive, of course, by definition but also as along as we’re still in good health.
They are talking about this type of measure here in France, but for the moment anti age discrimination groups are fighting it. In France, your driver’s license is for life, so no renewals at all, which is very practical.
Wow, thanks for the great descriptions of the evolution of the father and brother's cheese marking venture and of the cheeses themselves! If one time we drive north from Angers to visit our daughter in Brussels, we'll have to plan a stop/night here.

I remember this farm from a previous post. Cheesemaking is certainly a complex process! It's amazing so many producers get it right.
