I'm generally a big user of leftovers, but perhaps the most anti-gaspi move I've made is putting off food shopping until our stock of fresh food is nearly depleted. Sometimes the fridge gets pretty empty, but it's better than finding floppy or worse, rotting vegetables there.

my fridge can get pretty empty but my freezer can get very very full as I batch cook. Even when I'm using leftovers, turning things into soups or caseroles etc

Our freezer is still full of some of last year's fruit! Well, there are some strays here and there.

Despite my best intentions, we never quite get to batch cooking. Any favorite recipes?

Leftovers are a chance for creativity. I do enjoy that. (Sometimes I make a dish that goes through several transformations over the course of a few days. Less work, overall!)

I did this with an asturian bean dish I wrote about recently. It started out as basically a pork and beans dish then had various pieces like mushrooms and greens added to it. This is how a lot of very old French dishes were built. Pot au feu would be on for days.
