The first Paris-Nice, a well-renowned race in France, took place in 1933. Since then, the greatest cyclists have won this one-week time-trial which connects the French capital to one of the most beautiful cities of the Mediterranean, Nice, on the French Riviera.

Most visitors to Nice at some point head for the best-known food and flower market in the city’s Old Town (Vieux Nice). The historic Cours Saleya Marché, named after the street it runs along, is a bustling, vibrant market with fruit and vegetables, olives, herbs and Provençal gifts.
We spent the morning wandering through the old town’s bougainvillea-filled back streets and ogling super yachts being cleaned and restocked with champagne for the upcoming summer crossings.
I will talk about socca de Nice, since this is where I live and the type I am most familiar with. I say ‘familiar’, but what I really mean is ‘Completely 100% Addicted’ and ‘Pretty Qualified’ to discuss the socca made in Nice!
The overnight train from Nice to Paris was, in my mind, the most romantic means of travel imaginable. I’d watch the palm trees give way to conifers and open fields. The fiery evening sky would dissolve into a soft, dark twilight before plunging into starry blackness.
